Garlicky Mussels in a Lemon, Herb, Butter Sauce

Hope you had a good weekend. Remember, the first five days after the weekend, are the hardest, but we can “mussel” through it. The weekend will be here before you know it.
Garlicky Mussels in a Lemon, Herb, Butter Sauce
2 tablespoons olive oil
1 Vidalia onion, diced
1 chili pepper, sliced in half
1 bay leaf
10 garlic cloves, minced
1 tablespoon fresh parsley
2 tablespoons herb de Provence
juice of 1 lemon
1/2 cup white wine
2 1/2 lbs. mussels, scrubbed discard any that are not alive (open)
4 tablespoons butter
fresh herb (to garnish)
lemon slice (to garnish)
1.In a large pan pour olive oil to cover bottom of pan add onions chili and garlic sauté till translucent.
2.Add herb de Provence, lemon and wine.
3.Add mussels cover and steam 5 minutes till all are opened.
4.Remove mussels to a large bowl.
5.Keeping the juice in the pan whisk in the butter and pour over the mussels.
6.Garnish with fresh parsley and lemon.
