Sticky Baked Drumsticks
I think I’ll bake some drumsticks for the Raiders/Chiefs game tonight. Why wouldn’t I? Go Raiders!
Sticky Baked Drumsticks
Olive oil, to drizzle
12 chicken drumsticks
Kosher salt and fresh, ground pepper, to taste
Sesame seeds and thinly sliced scallions, for garnish
For the glaze:
1/2 cup honey
1/4 cup fish sauce
2 tablespoons soy sauce
Juice of 2 lemons
1/4 cup rice wine vinegar
2 tablespoons sesame oil
Heat the oven to 400 degrees. Lightly oil a large baking dish. Season the drumsticks with salt and pepper and arrange in the dish in a single layer. Drizzle over a little olive oil and bake in the hot oven for 20 minutes.
Prepare the glaze in the meantime. Mix all the ingredients together in a small bowl until totally combined.
Take the chicken out of the oven and pour over the glaze, to coat each drumstick. Return to the oven and bake for another 20 to 30 minutes, turning several times, until the chicken is tender and nicely glazed.
Garnish with sesame seeds and scallions.
